Vegan Brunch Bowl

Gluten Free | Vegan | Serves 2

This is one of my favourite things to have for brunch on the weekends! It's simple, flavourful, satisfying and keeps me full until dinner.

Ingredients:

- Tofu Crumble (click here for recipe)

- 2 yellow potatoes

- 1 avocado

- sprouts

- 1 tbsp of avocado oil

- cracked black pepper

- chilli powder


Directions:

1) Cook tofu crumble

2) Cut up potatoes into small cubes and cook in air fryer (or oven) at 390 degrees with avocado oil and spices for 15 minutes or until crispy.

3) Add cooked potatoes and tofu crumble to bowl, top with half of an avocado and sprouts and enjoy!
